What You Need to Do
When making food jerky, you will need 1 teaspoon paprika, 1 teaspoon onion powder, 1 teaspoon garlic powder, 1 teaspoon ground black pepper, 2 teaspoons salt, 2 tablespoons brown sugar, 2 tablespoons liquid smoke, 2 tablespoons Worcestershire sauce and a quarter cup soy sauce.
Trim the meat of extra fat before placing it in a zip top bag. Freeze it for about 1 to 2 hours but first remove excess air. Once you remove it, cut the meat with the grain.
Make sure the knife is sharp enough to do the cutting. Cut the beef into long strips. However, you may choose to cut it into desired shapes.
Place the strips into the zip top bag and add the other ingredients. Seal the bag and make sure to remove excess air. Place the bag in the fridge for 3 to 6 hours.
If you place it in the freezer for 3 hours, the meat will have a milder flavor. On the other hand, if you choose 6 hours, this will make the meat more vibrant.
After the allotted time, remove the bag from the freezer and pat the meat dry with a paper towel. Set the food dehydrator to 165 degrees F.
Place each strip of meat onto the tray of the dehydrator. Check on it once in awhile to make sure that the meat is dehydrated to perfection.
It usually takes 2 to 12 hours for the meat to dehydrate. The process of dehydration depends on the drying power of your dehydrator and the thickness of the meat.
Tips in Making Beef Jerky
One of the essential things to remember is to avoid over-drying your meat. The role of the food dehydrator is to remove all the moisture from the beef.
Do not leave your beef jerky in the machine for too long because the meat will become extremely dry and will easily crack once you try to bend it.
When you marinate the meat, you can throw in some ginger or red pepper flakes if you want it spicy.
